Abstract:

Banana fruits are characterized by its high nutritional benefits especially due to high contents of protein and carbohydrates as well as mineral and vitamins. Banana peels is mentioned as good source for dietary fibers that serve potentially in obesity and diabetes mellitus control. The aim of this study was to assess the some of the biological parameters of diabetic rats by feeding bread formulas with different levels of banana peels replacement. Obtained results indicated that there was significant decrease in total body weight as well as liver enzymes (ALT and AST) of rat groups fed banana peel containing bread compared with both negative and positive control rat groups. Serum urea, uric acid and creatininwere also reduced than control rats. Triglyceride, total cholesterol, LDLc and VDLcwere characterized by their significant decrease as proportion to intake level of banana peel in bread. Relative weight of orangs of animals fed on prepared bread formulae were significantly decrease comparing to rats fed on control diet. Glycemic indices showed significantly decrease in group of animals fed on prepared bread by using banana peels. Form the results, it could be concluded that bread contained 85% wheat flour and 15% banana peels was the best formula in body weight control and boosting of serum lipid profile as well as exerting significant decrease of liver enzymes titre (ALT and AST); kidney function index (urea, cereatinine and uric acid).
